"I became a chef almost 25 years ago and I've co-owned and ran some very successful restaurants, but now first and foremost I'm a conscious chef and most of my work tends to be out of the kitchen at present because I'm passionate about healthy eating and teaching people about how easy it is to make better choices and prepare good wholesome food for themselves and their families. I found my way towards eating only nutrient dense food a couple of years ago when I began to eliminate certain things like sugar, wheat, gluten and dairy from my diet and also from my families diet too. The results were incredible to say the least and I was astounded by how much better we all felt. I felt compelled to learn more so I studied as much as I could about food and the human body and eventually enrolled in a course with the Institute For Integrative Nutrition in New York, from which I just graduated with a health coach qualification."

What does ‘living naturally’ mean to you?
Living naturally to me means nourishing mine and my families minds and bodies with love, water, nourishing unprocessed food from mother nature, and enjoying a balanced dose of sun every day.
What does a typical day in the wellness world look like for you?
I like to wake up with sun, drink a big glass of filtered water, and sit and breathe in some oxygen, then I'll grab my surf board and catch some waves. I'm lucky that my partner Nic loves to cook, so I always get well looked after with a nutritious breakfast - often fish and veggies which is my favourite or a delicious green smoothie full of goodness. Then my day can be anything from writing, speaking engagements, filming, teaching a cooking class at a primary school, recording voice overs, recipe creating and testing, or picking up the kids from school and taking them horse riding or surfing. I try to do 30 minutes of exercise at some stage everyday, we eat dinner at 5 and try to hit the sack around 9 or 10pm.
What are your top 3 tips for staying fit and healthy?
I can't do 3, I need to do 4... Drink plenty of filtered water! Eat nutritionally dense food, by this I mean loads of colourful, seasonal veggies especially greens and fermented/cultured vegetables too (the perfect natural probiotic), a balanced amount of wild sustainable fish, organic free range chook, and grass fed, ethically raised meat (organ meat too), nuts, seeds, herbs, spices and low fructose fruit like berries! Get outside, absorb some vitamin D from the sun, earth yourself and do something active to get your body moving! And lastly enjoy unconditional love and fulfilling relationships!
In a nutshell, what’s your food philosophy?
It's really simple, I avoid sugar, wheat, gluten, dairy and grains, and I eat and cook with seasonal, organic, sustainable, ethically raised vegetables, fish, poultry, meat, nuts, seeds, herbs and fruit.
What do you do to ‘reset’ the balance button when life gets a bit hectic?
I head straight for the ocean when I feel like I need to be cleansed, it refreshes me instantly! Also we invested in an infrared sauna to have at home and I find 30-45 minutes of relaxing in there to be very rejuvenating too.
We’re all about balance around here…What’s your biggest indulgence?
I'm all about balance and remaining flexible so that you don't get bent out of shape too. I'm a huge movie buff and my partner Nic enjoys a good flick too so we love to indulge in relaxing on the couch together with some yummy carob and nut balls, a glass of organic red wine and a good film on the box. I've been known to surf all day if the waves are good too.
What healthy snacks might we find on your desk or in your handbag?
Well I'm not one to use a hand bag, but I do have a back pack that I take everywhere with me, and I always have a mixed bag of nuts, seeds and coconut cubes in there.
Can you share with us your top two pieces of advice for people wanting to start a career in the wellness industry?
Do your own research first and read some books about health and wellness so that you really get a feel for what you're going to be learning and practicing, then if you're still feeling passionate about it, dedicate yourself to getting a good qualification, study hard and learn your craft inside and out. Helping people to find their way to optimum health is an incredibly rewarding job and it's a journey that I highly recommend!
Do you have a favourite affirmation or quote you remind yourself of when life throws you a few challenges?
I don't have a quote as such, I just make a conscious effort to take slow, deep breathes and instead of saying anything to myself I switch off my mind for a few minutes of peace and quiet.
